Creamy Linguine 2 packages linguine 4 tablespoons margarine 4 tablespoons flour 4-6 cups cooked, cubed turkey ham (I normally just use one package, whatever that comes out to) 1 cup grated romano cheese 1 cup 2 cups seasoned croutons 2 cup 3 cans evaporated skim milk 3 cups water 3 chicken bouilloun cubes Cook linguine according to package directions. Melt margarine in a medium saucepan. Stir in flour and evaporated milk. Bring to a boil, stirring constantly, boil for 1 minute. Add water and bouilloun cubes and cook over medium heat, stirring constantly until sauce is thickened and bubbly, about 10 minutes. Mix sauce, ham, and linguine together. Sprinkle with Romano cheese and croutons and serve. This recipe is adapted from Once a Month Cooking and then doubled - it freezes wonderfully. You may want to save out the croutons from what you are freezing. Reheat instructions - you can either reheat in a 400 degree oven for 15 to 20 minutes (make sure it is fully thawed) or you can warm it in a pot on the stove top - the stovetop method produces the best results (baking tends to dry it a little) |

Chicken Packets (double this recipe and freeze half the meat filling for a second meal) (I will usually cook an entire crockpot full of chicken, save out enough chicken to double this recipe, and then use the rest to make lunches for a week) 2 cups cooked, chopped chicken 1 3 ounce package cream cheese, softened 1 tablespoon chopped chives 2 tablespoons milk ½ cup crushed croutons 2 packages crescent rolls Preheat oven to 350. Mix chicken, cream cheese, chives, and milk, to make filling. Spray baking pan with cooking spray and coat with crushed croutons (if I don't have pre-crushed croutons, I sometimes use granola to save time). Roll out one entire crescent roll dough on the pan, top with meat filling, roll the other crescent roll dough on the top, and seal the edges. Bake for 20 mintues.
