There is more to potatoes then a good tasting vegetable that comes in many different colors.  The potato is a virtual vitamin dressed up in a skin that is chock full of minerals and vitamins.  You can take your choice of red, yellow, white, or brown the potato is a food that is chock full of health.

Potassium is a mineral that is extremely important for the human body to operate efficiently.  When people think of foods that contain potassium they immediately think of bananas.  But a single potato contains more of the nutrient then a banana.

The human body needs potassium in order to perform 2 important functions.  The first has to do with muscles and how they contract and the second has to do with with the minerals ability to help regulate the heart beat and rhythm of a person.

A potatoes high potassium levels are also vital in their ability to covert glucose into energy.  In other words without this conversion the human body will shut down.

Potatoes are also great for a person’s diet.  There are many potato recipes that taste great while being healthy.  As a matter of fact you can even cook up a slow cooker potato soup recipe and still enjoy the health benefits of a potato.

There is no fat or cholesterol in a potato and the sodium content is minuscule.  With all of these benefits the potato is starting to sound more like a health food then a plain and simple vegetable.

Many people seem to believe that all of the goodness of a potato is found in the skin.  This is not true.  Most of the minerals and vitamins are found right in the potato itself with only small amounts accumulating in the skin.  But if you want 100% of all available goodness then you should leave the skin of the potato on while cooking and eating it.

Steak Burritos – Fast, Fun, Easy Dinner!

Are you in the mood for a bit of steak but don’t want that heavy feeling you get after a dish of steak and potatoes? How about trying steak burritos with delicious Mexican spices and cheddar cheese, along with a bit of lettuce, guacamole, and salsa for color? Your belly will thank you for it, and you’ll feel like you’ve had a trip across the border!

If you can get a good Mexican beer with your burritos, all the better, but if not, give some fizzy lime spritzer a try. Touch it up with a lime and some mint for a virgin Mojito, or forget the virgin and put the rum in!

To make steak for your burritos, get your hands on a large juicy steak – the nicer the better. Good meat makes good food! Marinate it in lime juice, coriander, cumin, chili, and garlic for a few hours, then pop it on the barbie until it’s just cooked and still soft and red inside. Take it off, and immediately slice it up

Have your soft warm flour tortillas ready and spread the slices of steak across them, down the middle. Just two or three slices of steak per burrito is fine – you’re going to be packing out the rest with condiments. Sprinkle a touch of cheddar or Monterey Jack cheese over the steak, then add some salsa or jalapenos over that. Dollop on a generous spoonful of sour cream, and an equal one of guacamole, then top off the rest with lettuce.

Roll the burrito tightly, folding the end over before rolling so it makes a nice handle that doesn’t drip. Eat immediately and feel good!
