Cooking Tips for the Time-Challenged

Think of a full-time working mother, a medical student, and a corporate banker. What do all of these rather diverse people have in common? The fact that they do not have much time at their disposal! In today’s world, where everything and everyone is so much more accessible, the fact that there are more labor-saving devices than ever before has not solved the problem of a lack of time.

If anything, there is less and less time at our disposal. Whereas at one time, we could leave our work behind us at the office, nowadays our work goes home with us. Now that we have modems, home computers, the Internet, and mobile phones, we can no longer say that we cannot be disturbed. Unless we are very strict about it, we can be reached at all times of the day and night.

For this reason, certain parts of family life have gone out of the window. These include family mealtimes, parlor games, and general family quality time. An entire fast-food industry has grown up around the concept of making meals fast, in a hurry. The most common solutions to this problem include pouring boiling water over some dried out chemicals or throwing other chemicals into a microwave, where they are radiated into something palatable.

But we don’t have to sacrifice our good health and family time on the altar of hard work and modern technology. There is a piece of kitchen equipment that is often forgotten but is a boon to any busy person who would like to eat a decent meal at the end of a hard day’s work, and that is the good, old-fashioned crock pot.

Another name for it is the “slow cooker”, and it is its slowness that actually can speed up our cooking time. The idea is that all you need to do before you go out to work is throw the ingredients into the pot, and when you come home again you have a hot, nutritious, and delicious meal waiting for you.

There is no need to eat hydrolyzed vegetables anymore. The meat and vegetables that slowly simmer inside your crock pot are cooking in their own juices, so the nutrients within them are not lost. This will help you to eat healthy with very little effort at all.

These days, there is a wealth of suitable recipes for your slow cooker. You can make anything, from barbecued chicken, goulash, meatballs, and cheese dips, to baked apples, and even a chocolate pudding cake. With a bit of research, you will find that your crock pot is extremely versatile and can make crock pot recipes from crock pot chili to crock pot beef stew, and the type of things that you can make are so varied that no one would even have to know that you prepared them that way (unless you want to tell them!)

This is probably about the best way to cook homemade “fast food”, and any working mother will tell you that her kitchen life was never the same again once she discovered the delights of the crock pot. Perhaps one of its greatest advantages is also the fact that there is very little cleaning up to do afterwards because only the one pot is used, which is the other secret of good food preparation when you have little time to waste!

Winter Grill and BBQ Tips

A burning barbecue used in a summer cottage.

Just because there is snow on the ground doesn’t mean you can’t wheel out your gas grill and get some delicious food. Some people automatically store their barbecue once the leaves start to fall onto the ground, but with a little bit of ingenuity there is no reason you can’t get great barbecue food all of that time.

You might have to endure some harsher elements but it will all be worth it in the end. Biting into a juicy piece of barbecued food is just as delicious in the winter as it is in the summer. Plus you will be getting a unique experience that might end up becoming a family tradition itself.

Make sure that you tell your guests that you plan to have a winter barbecue before inviting them over. Not everyone will be keen on the idea of eating outside so you might want to set up a dining area indoors as well. But if you want to have a truly authentic winter eating experience that it has to be outside. It’s not all that hard to make an outdoor area comfortable for people as long as you have a heater and some sort of overhead covering. Obviously you aren’t going to have your guests sit on snow covered chairs, so you want to create a dining area that is basically like what you would find indoors.

Keeping your guests warm is going to be a major concern so make sure that you tell them to dress appropriately. You are also going to want to pick a day for your barbecue that is free of rain or snow.

Sometimes people get stubborn and insist that they’re going to have their winter barbecue on a particular day, but if the weather report says the next day is going to be clear then it is usually best to postpone. You can also keep your guests warm by serving beverages such as hot chocolate and coffee.

When it comes to the barbecue itself you are going to have to choose between charcoal and gas. A charcoal grill is usually best for the summer season since it is a little bit more difficult to master overall. And if it happens to be quite windy or cold outside then a charcoal will definitely be more of a challenge.

If you want to make things easier on yourself and improve your odds for a delicious product, then gas grills are the way to go. Most homes already have a gas grill used for summer barbecue and it will definitely serve your winter cooking needs well. Just make sure to set up a comfortable cooking station that is protected from the elements. Remember there is no reason that you can’t enjoy barbecue at all times of the year, so happy grilling!

To begin, take the seeds out of the pumpkin and remove the stringy pulp from the seeds by placing them in a bowl of water. By rubbing the seeds in your hands, it will help to make the pulp removal easier. Next, pour the seeds into a strainer or colander and rinse with warm water.

Dry the seeds and spread over a paper towel to let them thoroughly dry. Once dry, place them on a cookie sheet and back on a low 250 degree oven for 2-4 hours. After they are done baking, let them cool before adding seasoning.

Some popular seasonings to try are:
- butter and salt (just like popcorn)
- olive oil and garlic
- garlic powder
- cayenne pepper
- taco flavoring
- chipotle powder

Try any of these combinations after the seeds have been baked and cooled. If you put the seasonings on first, the pumpkin seeds will not roast properly.

You can also use your roasted pumpkin seeds (roasted plain or seasoned) in many other dishes. Try topping your salad or grilled meats with roasted pumpkin seeds. Some people have also been known to put them in their ice cream. The possibilities really are endless! Experimentation is key when you are roasting pumpkin seeds.

Eggplant belongs to nightshade family and its origin is India. Earlier varieties were bitter, but, with crossbreeding, and cultivation, the favor has greatly improved. Eggplant is associated closely with tomatoes, potatoes and peppers. In addition, eggplant benefits are many.

Eggplant is not so popular in the United States, but it is a favorite vegetable in several regions of the South. Thomas Jefferson, who is credited for the introduction of eggplant in North America, has done experiments with many varieties.

Florida produces for domestic purposes, while the New Jersey is the main supplier during summer season. The dark purple colored eggplants are considered as the most usual type marketed commercially in the United States. The weight of each one is about 1 to 5 pounds and come in two different shapes including elongated and oval. The elongated variety is often called, Japanese or oriental eggplant.

Special varieties such as miniature eggplants come in different shapes and colors. On the other hand, eggplants having round, deep purple and oval shaped are nicknamed as baby eggplants or Italian. Pale violet eggplants are generally light and slim are nicknamed as Chinese eggplants.

Eggplants are available all through the year; however, their peak-growing period is from July to October in the United States. Storing eggplants is easy. Commercial eggplants look smooth and have uniformed color skin. Tan patches, bruises and scars indicate rot. Avoid eggplants having wrinkled or flabby looking skin. Extra large purple eggplants that usually measure over 6 inches in diameter, taste bitter.

If you press the fresh eggplant with your finger, the finger mark will fade away quickly. Eggplants that feel heavy taste good, while the one that feels light may not have a good flavor. The cap and stem should be bright green.

Eggplants get damaged in both cold and warm temperatures. Therefore, it is better to store eggplant without cutting and unwashed in a plastic bag in the refrigerator.

It is important to wash the eggplant before using it, also cut off the stem and cap. Do not cut eggplants with carbon blade, as it will discolor the eggplant. Do not eat raw eggplant; cook it with or without its skin.

Over the last few years, pork has become extra affordable and has some amazing health factors.  The meat tends to be very tender and low in fat.  It can be cooked just about any way and has lots of ability to please even the most sophisticated pallet. Pork chops and pork tenderloins can be cooked in almost any fashion.  Two very popular ways to cook pork are grilling and and sauteing.

Grilling can be done for just about any cuts of pork including a Boston Butt Roast, a Pork Loin Rib End Roast, a Bone in center cut roast,  tenderloin, center cut chops, and bone in chops.  Grilling times vary depending on the cut of meat and the thickness.  For the more traditional cuts of meat, regular grilling is a great option.  For the larger cuts of meat, a form of grilling where the meat does not get any direct flame.  This is where you would put the meat on one side and leave the flame on the other side.  This is known as indirect heat.  It is very similar to what happens in the oven at home but it does not heat up the house and you get the nice grill flavor.

Sauteing is better suited for smaller cuts of meat.  I would describe it as more like meat pieces.  This is where you cook the meat fast in oil in very high heat moving the meat around.  This gives the outside a nice sear and the inside stays nice and juicy.

Any form of pork can be flavored in many ways.  Pork in very nice with a rub on it, basted, injected, or just simply seasoned with salt and pepper.  Pork chops recipes and pork tenderloin recipes go very well with a wide variety of side dishes including any type of potatoes and vegetable, rice, and breads.
