Gorgeous Lemon Chicken
I remember when I met my wife she told me that one of favourite dishes was any kind of Chinese food and seeing as I had not set foot in a Chinese restaurant up until that point I was a bit dubious.
We went to a Chinese restaurant the following night and I am a little bit of a fussy eater believe it or not so i plumped for Lemon chicken and then found that I had a new favourite dish, I loved it so much I started experimenting by making it myself from scratch and making it slight differently as I love to be creative.
So here is my lemon chicken dish that I serve up regularly to family and friends, I hope you like it.
Lemon Chicken
Ingredients:
- Chicken breast strips
- 1 crushed garlic
- 1 chili chopped
- 2 tbsp of cornflour
- 1 egg white
- 1 tbsp of soy sauce
- 1tbsp of sugar
- chicken stock
- 4 lemons
- Salt
- Black pepper
- Groundnut oil
Preperation:
- Put the cornflour, chicken, egg white, salt and a dash of oil into a large bowl and mix thoroughly, place in the fridge and leave to soak for approx half an hour.
- Heat a wok and add a dash of groundnut oil and heat until it starts to smoke.
- Remove from the heat and add the chicken out of the mix you prepared earlier, remember to constantly turn the chicken otherwise it will stick to the pan.
- When the chicken is a nice white colour remove and place to one side.
- Clean the wok and add stock, lemon juice and sugar along with the garlic and chili and get to the boil.
- Once boiling add in the cornflour then simmer for a couple of minutes and add the chicken, stir fry to make sure the chicken is cooked and add your pepper.
- Add rice to complement and you have your perfect lemon chicken.
There you go one of my favourite chicken breast recipes an here was me thinking about giving you a dull potato salad recipe.

Potato Salad Rocks! Potato Salad Staple
Filed under: Easy Recipes, Feeling Healthy, Healthy Eating, Simplify Life
Potato salad is one of the staples of mine when I’m eating a large amount of salad which tends to be in the summer. I absolutely love it and think it is tasty and delicious, I do however have one problem with it and that to be fair it is a little bland.
The fact is that every time I invited my family or a group of friends over to have some salad and a BBQ with me It usually didn’t really get eaten, so I tried hard to come up with a different twist on potato salad and I think I have, I have created a spicy hot potato salad that still accompanies BBQs very well but also has that extra hot zingy taste that is missing.
Spicy And Hot Potato Salad
Ingredients:
- New potatoes washed and either halved or quartered.
- Salt and Pepper
- 1 Tbsp of mustard
- 1 Tbsp of Worcestershire sauce
- 2 Tbsp of mayonnaise
- 1 onion chopped into fine pieces
- 1 jalapeno pepper cut into small sections
- A good mix of black and green olives
- Some hot relish
Preperation:
- Combine the onion, pepper, olives and relish into a bowl and mix thoroughly.
- Combine the mayonnaise, Worcestershire sauce, mustard and salt and pepper into another bowl then add the two bowls together and mix very very well. Pour the contents over the potatoes once they have been boiled for five or six minutes and gone soft to the touch. Make sure all the potatoes are covered well in the mix.
- Place them in the fridge and allow to cool for a couple of hours or so.
- Serve.
There you have it a spicy twist on the humble yet good potato salad recipe Now to accompany that with the BBQ I would of been cooking I need to make some baked BBQ chicken breast recipes Delicious.

Lasagna, a Great Family Meal
Why Families love to Make Lasagna
Is your family grumbling about eating the same old four or five meals week after week? Looking for something you can have fun making and that will be enough to feed your family all while offering lots of different ways to prepare it? Try lasagna. Here’s three reasons why.
The Layering Game
When preparing lasagna, you’re allowed to have a little fun. Layering your ingredients is the name of the game when it comes to this tasty dish. Just start with your main ingredient and then add a layer of cheeses and then a layer of lasagna pasta noodles. Save some mozzarella cheese to put on top at the end and you’re done.
It’s Big Enough For Families
One thing cooks worry about a lot is if what they’re making will feed everyone. With lasagna, there’s no need to worry.
Like many other Italian meals, the pasta in lasagna will expand inside your stomach and help you to feel full. That’s why one good sized serving will probably be enough for most people to eat. If you need to make more than one pan, just double your recipe and have an extra pan on hand and ready to go.
Plenty of Variations
Lasagna is quite possibly the most versatile dish there is. Let’s look at just a few of the kinds you can make:
Chicken
Beef
Sausage
Tofu
Vegetable
5 Cheese
It’s easy to run out of dinner ideas, especially if you’re the one who does all the cooking in your family and you don’t have a lot of time to prepare things.
Making a basic lasagna recipe for your family will be a fun activity, feed your entire crew and you’ll never run out of options. So toss that tired hungarian goulash recipe, and make lasagna the next dinner in your family’s meal lineup.

Mikey’s Masterpiece Barbecue Sauce Recipe
Filed under: Cooking, Easy Recipes, Healthy Eating, Simplify Life
Summertime is almost upon us. It is time to clean the barbecue and get ready for cook-outs! One of the most popular outdoor meals is the good old barbecue. So saddle up and let’s get ready to make the most important part of the meal. The sauce!
The usual barbecue sauce recipe is made by using ketchup and molasses. Ketchup has long been he favorite way to barbecue chicken. It is so easy to prepare and use the tried and good bbq chicken recipe. For a change try to make the bbq chicken recipe long used in the Southwest and as well as the western states of the country. Try the vinegar and mustard sauce for a change.
Prep Time- 15 mins
Cook- 30 mins
Total- 45 mins
Makes about 2 1/4 cups
Ingredients:
1/4 C water
1 C mustard
2 tbsp chili
3/4 C vinegar
1 tsp blk pepper
1/4 C brn sugar
1/2 C sugar
1/4 tsp cayenne pepper
2 tbsp butter
1 tbsp liquid hickory smoke
1 tsp white pepper
1/2 tsp soy sauce
1. Mix together with the remainder of the ingredients and place into a large saucepan. The other ingredients should be added to the mixture later.
Caution: This sauce might be too spicy if you are cooking for your kids. If this is the case simply use a pinch of chili powder, and cayenne pepper. That should make the sauce mild enough for children to enjoy.
2. Simmer for about half an hour.
3. Add remainder of ingredients, stir and simmer for 10 minutes longer until ready to be used on the cleaned chicken and place on the barbecue.
That’s it! Now you are ready to coat your meat and grill up a great meal. This recipe is great for any meat, whether you are cooking delicious spare ribs, or using it for a bbq chicken breast recipe. Save some of the sauce for later if you want to use it as dipping sauce if you like.

Help! My Child Won’t Eat His Lunch!
Filed under: Easy Recipes, Healthy Eating, Kids Stuff, Simplify Life
Children can be picky eaters at the best of times, and their likes and dislikes seem to change weekly, so preparing daily lunch boxes can be quite a task at times.
We may plan a menu, only to have them tell you in the middle of the week that they don’t like that anymore. When these lunch box struggles begin, a good book to look to is Ellyn Satter’s Secrets of Feeding a Healthy Family, which gives advice on how to contend with your children’s lunch box animosities.
If we have children who generally don’t eat much to begin with, or would rather play instead of eating during recess at school, then we tend to be even more concerned about what goes on during those lunch break sessions.
It will stand to reason that children will learn better in the afternoon session at school, and will be more agreeable when they get home, if they have lunch at school. So how do we remedy this problem?
Firstly, provide something nutritive, but something they love. I normally use my banana bread recipe, using different variations, from adding cinnamon and raisins sometimes or chopped apples and nuts. Kids tend to love these and will usually not make a fuss, regardless of what else is provided.
Secondly, have a lunch box routine, where kids know what they’ll be getting for lunch on a given day, tied in with favourite leftovers from dinner.
Although the meals change based on the season, children will usually eat what you give them on earlier on in the week, once they know they will get their favourites later in the week.
Thirdly, I ensure that I give my kids a quick snack as soon as they get in the car, to help them get through the evening till they get their dinner. Simple choices like a fruit such as an apple or banana can help overcome any lingering lunchtime hunger issues.
But remember, if in doubt, find yourself a copy of Ellyn Satter’s book, because I believe it is one of the best parenting books available for all sorts of food issues with kids.

Marinated Sirloin Steak
Filed under: Cooking, Easy Recipes, Feeling Healthy, Healthy Eating, Simplify Life
Last Friday afternoon my girlfriend and I went to a party at her neighbor’s house. Her neighbor has been a professional chef for the last six years and usually prepares excellent foods for our friends.
On this particular afternoon she prepared a very tasty marinated sirloin steak that was packed with protein. Most people today are very health conscious and don’t want to consume too many carbohydrates. Carbohydrates are what is stored as fat if you do not burn them off. For this reason, many health conscious people today do their best to eat more protine than they do carbohydrates.
This is a tactic to help people lose weight. Well, I didn’t know this but my girlfriend and her friend talked to me about the importance of eating a high-protein diet.
While we were at this get together, I learned a lot about how eating high protein meals can affect my weight. I did not know that it was so much more healthier to eat more protein than carbohydrates.
When my girlfriend and I began to help her cook, we were discussing the recipe at hand. We determined that a marinated sirloin steak is something that we’re going to eat on a regular basis.
My girlfriends friend told us that preparing sirloin is not difficult at all. She said for this particular recipe all we were going to need was cut honey, olive oil, vinegar, garlic, ground pepper, obviously sirloin steak, and sliced tomatoes for extra flavor.
She said that basically we needed to get a blender and combine the first five ingredients together. By blending in together it will give the sirloin more of a uniform flavor. Basically what we’re going to do is drain all the marinade from the plastic bag that your sirloin was marinating in. Once you have drained all the marinade out, this is when you add a few more spices. On this particular day, we only added a little bit of seasoned salt and a little bit of regular salt in addition to its main ingredients. It did not take us long to prepare this because our friend had prepared it a number of times before and was very good at it.
She told us that sirloin is something that is served at just about every restaurant so that we don’t always have two prepare it at home. She told us that we can go to places like outback steakhouse, or Chili’s, or better yet, Applebee’s bar and Grill.
She said that she actually learned how to prepare her steaks while she was eating one at Applebee’s. She told us that if we were not comfortable with preparing sirloin on our own that we could also learn at Applebee’s. She said that whenever she goes to Applebee’s she saves money by using some of their free Applebee’s coupons. Each Applebee’s coupon is worth a different value but it will definitely help you save money either way.
When we sat down to eat dinner all of us go into our steaks. My girlfriends best friend also prepared some cabbage, corn, and baked beans to go along with the robust flavor of this marinated sirloin. The afternoon went great but I am not sure if I am going to prepare sirloin on my own.
With that being said, I want everyone else to know that they can also go to Applebee’s or outback or Chili’s and get a very similar marinated sirloin steak. If you are the type of person that likes to prepare your own food, then feel free and enjoy the experience.

Dinner On The Table In No Time
It can be a challenge providing healthy and nutritious meals to a hungry family, especially if you are working and trying to raise kids simultaneously.
It is particular hard now that the norm seems to be to buy food that is heavily processed, refined, pre-packaged and contains additives that most of us don’t know how to pronounce let alone know what they do to our health.
When I read an article about solvents and cleaning detergents used as some of the ingredients or in the preparation process for some foods, I made a decision then and there to eliminate additive from my families daily diet. Unless I was absolutely certain it was something harmless like vegetable gum.
This was a bit tricky for a month or so just because of the change in routine and it took longer at first at the shops as I had to start reading the ingredients, I was so surprised how many things I couldn’t buy anymore.
Now I have found a suitable range of things I can buy life is pretty much the same as normal except I feel really good knowing that my kids are not consuming additives. Their behavior was always quite good however I was unprepared for the change in their temperament, they are calmer, more polite and less prone to tears since they are not consuming additives.
One essential tool when preparing food from fundamental unprocessed ingredients is to buy yourself a slow cooker. I do not have a lot of time to spare to slave away in the kitchen, I chop the meat and vegetables the evening before store it in an airtight container overnight. I add it along with other ingredients like herbs and spices, to the slow cooker, the next morning before I leave for the day.
The best chicken breast recipes are the ones that include a lean cut of chicken like chicken breast. When I arrive home dinner is done, I usually serve up something like roast pumpkin seeds to munch on while I prepare some greens to have with the meal.
