Pork tenderloin is one of my favorite dishes.   Not only is it a very flavorful meat, it is also one of the healthiest types of red meet you can eat – it is low in fat and cholesterol.    Furthermore, it is very easy to cook. Now these in themselves are enough to convince most people that pork tenderloin makes a great dish.

However, there is more.  Pork is also an extremely versatile meat, and you can eat it with all different forms of spices and sauces.  Here are some of the best combinations taken from my favorite pork tenderloin recipes:

Berry Sauces – pork goes fantastic with many different fruits, and especially berries.  One of the most popular of my recipes is a pork loin with a blueberry port sauce.  The sweetness goes excellent with the pork, making this a popular combination.

Other recipes I enjoy using fruits are pork with sour cherry sauce (great sweet sour combination), pork with apple and caramelized onions, and roast pork loin with sherry, apple and raisin compote.  As you can see, each recipe is a very distinct flavour, but they all go great with pork.

Spices – pork goes great with rosemary, thyme, cinnamon, pepper, cumin and I am sure many other spices (not all at the same time).  It is sufficient to make the pork loin roasted in the oven with a spice or two, and these spices will really shine through when you taste the pork.  As always, it is important to use fresh spices.

Tangy sauces – pork with tangy sauces is also a great combination, and tends to be a favorite with kids and often with adults.

My favorite of all pork recipes is pork loin with with a maple dijon sauce, served with maple sauteed apples.  Another favorite is pork loin with a BBQ sauce.  It is delicious like ribs, but without all the fat.

Curried pork – the indians and thai do this the best.  Pork goes great with curry sauces…red thai curries or indian yellow curries.  Although a typical curry is not normally make with pork tenderloin, it is a great way to make it, as it is much healthier.

Why Families love to Make Lasagna

Is your family grumbling about eating the same old four or five meals week after week?  Looking for something you can have fun making and that will be enough to feed your family all while offering lots of different ways to prepare it?  Try lasagna.  Here’s three reasons why.

The Layering Game

When preparing lasagna, you’re allowed to have a little fun.  Layering your ingredients is the name of the game when it comes to this tasty dish.  Just start with your main ingredient and then add a layer of cheeses and then a layer of lasagna pasta noodles.  Save some mozzarella cheese to put on top at the end and you’re done.

It’s Big Enough For Families

One thing cooks worry about a lot is if what they’re making will feed everyone.  With lasagna, there’s no need to worry.

Like many other Italian meals, the pasta in lasagna will expand inside your stomach and help you to feel full.  That’s why one good sized serving will probably be enough for most people to eat.  If you need to make more than one pan, just double your recipe and have an extra pan on hand and ready to go.

Plenty of Variations

Lasagna is quite possibly the most versatile dish there is.  Let’s look at just a few of the kinds you can make:

Chicken
Beef
Sausage
Tofu
Vegetable
5 Cheese

It’s easy to run out of dinner ideas, especially if you’re the one who does all the cooking in your family and you don’t have a lot of time to prepare things.

Making a basic lasagna recipe for your family will be a fun activity, feed your entire crew and you’ll never run out of options.  So toss that tired hungarian goulash recipe, and make lasagna the next dinner in your family’s meal lineup.

Guacamole: From the Aztecs to You

An Aztec Food

Aztecs call the avocado the testicular fruit.  Considered an aphrodisiac, this green fruit was packed with nutrients and carried a mild buttery flavor.  In modern times, people still love the avocado.

In the United States, there are not too many people who are unfamiliar with guacamole.  The green paste made from avocados, we find in Mexican cuisine, has entered in to the mainstream diet of many countries.

The Versatile Avocado

Avocados have a mild, creamy flavor that can pick up the flavors of spices and other ingredients.  Guacamole recipes can be found to be very simple.  A raw, ripe avocado mashed and preserved by lime juice is often used as a dip.

This simple recipe is healthy and very satisfying.  But, people have found they can add sour cream to get a richer flavor or tomatoes and other spices to get a different style of dip.  The avocado is the base but what becomes of the guacamole is left to the imagination.

In recipes, the cook wants a rich tasting avocado to bring out the texture and taste of a guacamole recipe. The Haas avocado was a hybrid that originated in South America.  It is mainly grown in the United States and is the most popular because of its ability to live through cold temperatures.

Many purists believe avocados should come from Mexico.  These avocados are said to have the best flavor but can be expensive and hard to find in the typical super market.

How to Choose Avocados

Picking out the avocado for a guacamole recipe is simple.  The Haas avocado turns a purplish black when it is ripe.  All avocados should be slightly soft to the touch and the outer skin should not have any bruising or broken places.

An avocado that ripened on the tree is considered a prize catch.  For most people, especially people who live in colder climates, finding such a delicacy is not possible.

Guacamole is a popular dish because it can be easy to fix or be a complicated mixture of spices and other ingredients.  The health benefits of avocados are far-reaching.  Doctors have found that people, who include avocados in their diets, see a drop in their cholesterol.

The high fat in avocados is filled with monounsaturated fats and helps form the creamy base of guacamole recipes.   Enjoying the many guacamole recipes can help bring a healthy fruit to the table, which are in dishes that everyone can enjoy.

Try my favorite guacamole recipe. You will love this version of an ancient dish.

Save Money With Casseroles

Finnish macaroni casserole

Times were tough in the depression. Mothers were busy trying to save money and feed their families however they could.  Casseroles became increasingly popular as women tried to use their imaginations and their leftovers to save money while providing healthy meals for their children.

As today’s families struggle to shave dollars off their grocery bills, casseroles are enjoying a resurgence in popularity as home cooks make use of kitchen gardens and leftovers to create modern and nutritious one dish meals.

You can easily save the cost of one dinner a week by using leftovers from your previous meals to develop casserole dishes.  At the end of each meal, save every leftover you can -even a tablespoon of spaghetti sauce or the end of a block of cheese can add flavor to a shepherd’s pie dish or a baked pasta dish.

Use small freezer bags or tupperware (baby food jars work well too) and save vegetables, pasta, rice, chicken, pork, beef or beans. While you may not have enough pasta or rice to make the base of a new casserole, they can always be added to soup. Your vegetables, meats and beans are what you will focus on for your casserole.

Be sure to stock up on canned soups, dried spices and herbs, brown rice, pasta and canned or dried beans when they go on sale. These items are inexpensive and have a long shelf life so they are ideal for rounding out  casserole dishes recipes.

Canned tomatoes and beans are particularly flavorful, nutritious and cheap. To avoid serving the same old dish over and over again, change and combine the herbs and spices you use.

Try these for a flavor boost: fresh cilantro with dried chili pepper for a beans and rice based casserole, fresh basil with pine nuts in a pasta casserole, or garlic, lemon and rosemary in a chicken casserole. For more exotic recipes experiment with curry powder, lime and turmeric combinations.

One of the easiest ways to spend money you don’t have is to buy takeout dinners on busy weeknights when everyone is too tired to cook.  Avoid this pitfall by preparing healthy main dish casseroles ahead of time and freezing them. Pick a weekend to do some Once-A-Month-Cooking, and choose three or four recipes. Buy all your ingredients and several aluminum foil casseroles that can go in the freezer (these come in 8 x 8 and 9 x 13 inch sizes.)

If you have a smaller family, use single-serving containers that can be popped in the microwave for a one-person dinner. To save even more money, use produce from your garden. Tomatoes, peas, green beans, green and red peppers, potatoes and pumpkin are all excellent staples for family casseroles.

By using all of your leftovers, buying canned and/or dried products on sale, and preparing casserole dishes and freezing them ahead of time you can save at least $40-$50 dollars a month for a family of four.

Use the internet to find new recipes or flavor combinations – there is a lot of great information out there that can help you create delicious and money-saving casseroles.

Benefits of homemade pizza.

PHOTO OF CHEESE AND TOMATO PIZZA

Homemade pizza sauce requires the perfect combination of ingredients and maybe a little bit of luck. The best pizza sauce recipe will contain all fresh ingredients, namely fresh tomatoes. There are a number of benefits to preparing fresh homemade pizza sauce as opposed to purchasing a pizza from the store or a pizza chain.

All the popular pizza chains seem to constantly be running deals and special. While it may look like a great way to save money, the truth is that it is more affordable to make a pizza from scratch at home. The small amount of vegetables or meat needed to make a pizza is very inexpensive. A basic crust only requires some flour, water, and yeast, while a great pizza sauce can be made from fresh tomatoes and a variety of sauces. The dough and sauce can even be made in bulk and frozen for future use.

One of the best perks of making homemade pizza is that the pizza can be completely personalized. If one prefers sweet sauce, they can use a tomato strainer, food processor, and stove top to mix the perfect combination of ingredients. Even more exciting, the sauce can always be changed and experimented with.

Pizza made at home is typically far healthier than one purchased from a store or pizza chain. Any pizza sauce recipe can be altered to contain healthier ingredients. What is most important is that one can control what is going in to the pizza. When pizza is ordered or bought from a store, it is hard to know exactly what ingredients make up the pizza.

Making a pizza at home from scratch may seem like a hard job, but in reality it is more fun, less expensive, and healthier than ordering out. Find the perfect pizza recipe and get cooking!

Cooking Tips for the Time-Challenged

a slow cooker Oval Crock Pot

Image via Wikipedia

Think of a full-time working mother, a medical student, and a corporate banker. What do all of these rather diverse people have in common? The fact that they do not have much time at their disposal! In today’s world, where everything and everyone is so much more accessible, the fact that there are more labor-saving devices than ever before has not solved the problem of a lack of time.

If anything, there is less and less time at our disposal. Whereas at one time, we could leave our work behind us at the office, nowadays our work goes home with us. Now that we have modems, home computers, the Internet, and mobile phones, we can no longer say that we cannot be disturbed. Unless we are very strict about it, we can be reached at all times of the day and night.

For this reason, certain parts of family life have gone out of the window. These include family mealtimes, parlor games, and general family quality time. An entire fast-food industry has grown up around the concept of making meals fast, in a hurry. The most common solutions to this problem include pouring boiling water over some dried out chemicals or throwing other chemicals into a microwave, where they are radiated into something palatable.

But we don’t have to sacrifice our good health and family time on the altar of hard work and modern technology. There is a piece of kitchen equipment that is often forgotten but is a boon to any busy person who would like to eat a decent meal at the end of a hard day’s work, and that is the good, old-fashioned crock pot.

Another name for it is the “slow cooker”, and it is its slowness that actually can speed up our cooking time. The idea is that all you need to do before you go out to work is throw the ingredients into the pot, and when you come home again you have a hot, nutritious, and delicious meal waiting for you.

There is no need to eat hydrolyzed vegetables anymore. The meat and vegetables that slowly simmer inside your crock pot are cooking in their own juices, so the nutrients within them are not lost. This will help you to eat healthy with very little effort at all.

These days, there is a wealth of suitable recipes for your slow cooker. You can make anything, from barbecued chicken, goulash, meatballs, and cheese dips, to baked apples, and even a chocolate pudding cake. With a bit of research, you will find that your crock pot is extremely versatile and can make crock pot recipes from crock pot chili to crock pot beef stew, and the type of things that you can make are so varied that no one would even have to know that you prepared them that way (unless you want to tell them!)

This is probably about the best way to cook homemade “fast food”, and any working mother will tell you that her kitchen life was never the same again once she discovered the delights of the crock pot. Perhaps one of its greatest advantages is also the fact that there is very little cleaning up to do afterwards because only the one pot is used, which is the other secret of good food preparation when you have little time to waste!

Slow Cooker Or Crock Pot

Crock Pots and Slow Cookers are the same appliance.  They are electrical counter top appliances used for slow cooking food.  As appliances go, they are a relative newcomer, having been invented around 1970.  By 1974 the addition of stoneware inserts had been made, making them easier to clean, and reducing the problem of hot spots.

Although our slow cookers are relatively new, the concept of slow cooking is not.  It has been around for centuries.  Native Americans, Polynesians, and many other groups discovered that meat wrapped in leaves to keep it moist and then cooked for hours over a low heat yielded tender flavorful meals.  As it turns out, slow cooking is best suited for less expensive cuts of meat.  Those with a reputation for being tough often turn out to be tender and full of flavor, while more fatty expensive meats don’t fare as well, with a lot of the flavor being cooked out of them.  The secret to this phenomenon is that the cheap meats have more connective tissue which breaks down from long hours over a low heat.

Recipes with many seasonings are good in a slow cooker too.  The long cooking time gives the spices time to mix and marry, creating entirely new flavors.  The sum is definitely greater than the parts.

Crock Pots don’t fare particularly well when it comes to nutrition however.  Vegetables should be added late in the cooking process, as the heat tends to break the nutrients down and leach them out.  Slow cooking, while flavorful, is not the best way to cook for nutrition.  But if it’s flavor you’re going for, it can be awfully hard to beat, especially fro heavily seasoned recipes such as chili.  For chili, there is nothing better.

The great thing about them is that you don’t even have to stay there while they cook.  They cook at low temperature so there is less fire danger.  One thing you need to be aware of is that just like any other appliance that produces heat, precautions should be taken to ensure that children can’t be burned.  Although they cook at a low temperature (slightly under boiling for most of them), they are still more than hot enough to scald a child if they should spill.  Some also have parts that get pretty hot while they’re cooking, and they should be kept away from curious kids.

Properly set up and with proper precautions taken, slow cooking is a wonderful way fro busy families to have great tasting hot meals ready fro them when they get home.  Shop around and finds the crock pot or slow cooker that fits your needs best.

There’s more to pizza toppings than sausage and pepperoni.

January 2, 2011 by Lisa · Leave a Comment

Everyone loves pizza.  And almost everyone loves a traditional pizza with tomato sauce, mozzarella cheese, and pizza toppings like pepperoni or Italian sausage.

But pizza can be a delicious, healthy meal with exotic flavors that are a refreshing break from the ordinary.  Instead of just making the same old Friday Night Special, why not experiment with some pizza toppings that are delicious but unexpected.

These days, it’s not hard to buy a really good, store-bought pizza dough.  Many grocery stores have it in the refrigerator section.  All you have to do is bring it to room temperature and roll it out.  Most balls of dough will make two, 13-inch, thin-crust pizzas.

There are plenty of alternatives to ready-made pizza dough.  Pizza crust mix from a box or a bag works well.  And naan bread, pita bread, French bread, and English muffins will all work in a pinch.

Tomato sauce is great.  But it’s not the only option.  The Barbecue Chicken Pizza — first introduced by California Pizza Kitchen in 1985 — is a terrific alternative to the traditional Italian pizza.  It’s simple to make.  Just substitute barbecue sauce for tomato sauce.  We like Stubbs sauce. Then add roasted or grilled chicken strips, some thinly sliced red onions, and smoked gouda.  If you can’t find the gouda, virtually any smoked cheese will work.  And a little chopped cilantro added after it comes out of the oven really brightens up the flavor.

Chicken lovers may also want to consider a Buffalo Chicken Pizza.  It combines all the yummy flavors of Buffalo chicken wings, but it’s a lot easier to make.  And, in most cases, a lot healthier.

To make the sauce, melt some butter in a sauce pan and add some Frank’s Hot Sauce, or whatever your favorite kind is.  Brush the sauce on your dough.  If you like a really spicy pizza, you can add a little Tabasco sauce before you add the cheese.

Use mozzarella as your base cheese, and then crumble some bleu cheese on top of that.  Add some diced celery and some thinly sliced carrots and you’re all set.

Get out of your pizza rut, and you can enjoy pies like the top pizza restaurants serve.
