Feeling a little brave, and want to venture out from the beef, chicken, and pork, that is so heavily consumed by our society? If you have never tried buffalo meat before, you are in for a wonderful treat. Some people are a little bit hesitant to try buffalo, but once they do, most people like it very much. Unlike some wild game, buffalo does not have a strong gamey taste, and its flavor is often described as very similar to beef, yet more rich tasting and savory. Buffalo can be used in all the popular ways that beef is served, including, hamburgers, ribs, roasts, steaks, stews, and even buffalo jerky.

Buffalo, also known as bison, once numbered in the millions, and they were a life sustaining food source for the American Indians. They were almost hunted to extinction, but luckily their numbers have came up, and their prized meat is now available for you to purchase at affordable prices. However you decide to use this meat, it will certainly be enjoyed if it is cooked right. Because buffalo meat has less fat, and more protein than other meats like beef and pork, it is easier to overcook it. No one likes overcooked, tough meat, but thankfully with a few considerations, it is easy to make buffalo meat that is naturally tender and juicy.

Buffalo Meat is Great Roasted, or Burgers on the Grill

You will have the most success by cooking the meat slowly at low temperatures. If you are roasting it, make sure to have it ready ahead of time so you can cook it for several hours. Buffalo is can also be absolutely delicious when grilled or fried. Just make sure to check and turn it often. When the meat is done, it should be dark brown on the outside and lighter and juicy on the inside. Not only will you enjoy the taste, but also your body will thank you because of the high nutritional value of eating buffalo.

Pasta done quick with a blender

A speed blender is going to help make life for your kinds and yourself a lot more easier than you would have ever imagined. Not only is it going to be easier and faster to cook meals that you’ve been used to eating fro a whole, but the immense versatility of any blender that you get is going to let you cook a lot more dishes than what would have been possible without a blender. Italian food takes a lot of time to cook if it has to be done right, sure I can whip up italian anything in a couple of minutes is the time and the kids demand it, but usually I like to spend atleast an hour making and cooking the sauces, dressings and the condiments for the dish.

The thing with pasta is that in order to make it taste like the way the Italians intended it to be all the ingredients for the dressing need to be prepared fresh. The major component of spaghetti and meatballs or pasta in general is the tomatoes that go into them. While pretty much everyone uses tomato puree nowadays, the truth is and I know deep down inside you know it too that they taste nothing like real tomatoes. Coming from someone who has tried pretty much every available brand of tomato puree, the taste is off by a few factors namely the tanginess of the tomatoes as well as the sauciness of the puree. And some of the bad ones are so saucy to taste that the tanginess is missing altogether.

Once you’ve got the tomatoes and the herbs into the blender (I prefer to use the Vita Mix 1300 TurboBlend 4500)  and are done chopping all of the inions sauté the resulting paste and plop it into a pan with your boiled pasta for the best tasting pasta that you children have ever eaten.

The Woman’s Guide to Orange Juicers

Everybody knows that there is nothing like a nice cold glass of freshly squeezed orange juice.  This is one of the best tasting drinks in the world, and is one of nature’s sweet gifts to us humans.  While most of us like drinking fresh orange juice, the problem is that many people just aren’t strong enough to press the juice out of lots of oranges.  While many people just give up and head over to a juice bar to purchase orange juice, don’t give up hope yet.  The truth is that there are many inexpensive orange juicers available that don’t require you to have huge muscles.

For simple home use, your best option is most likely going to be an electric orange juicer.  This type has a motor that spins around, so all you need to do is press half an orange against the rotating part and it will get the juice out.  While it may be true that the harder you press, the more juice comes out, you actually don’t need to press hard at all usually.  In fact, just a little pressure will do the trick in most cases.

A simple electric juicer will work great for making a few cups, but if you are going to be juicing more than that, you would be wise to look into getting something a bit better for larger amounts.  One of the best options is to get what is called the orange x juicer, which is a stand up pressing machine.  Although this type isn’t electrical, it is easy enough for most people to operate.  It works great because it has a long handle that leverages your strength.  Simply put half an orange in the holder, press the lever down, and voila, the juice comes right out.  Although these press juicers typically cost around a hundred bucks or more, they are well worth it for making large quantities of orange juice.  You can even juice some lemons and store it in the bar fridge to whip up  some margaritas later.

Sourdough Starter Made Simple

There is nothing to compare to the tangy taste and chewy texture of sourdough bread. Buying a loaf of it in the grocery store will set you back $3-$6 depending on the brand. You can make that some bread at home — it’s simple. Making sourdough bread from scratch takes time and some patience, but it is easy.

First, in case you don’t know, sourdough bread uses wild yeast instead of store bought yeast to make the bread rise. The sourdough starter captures and feeds the wild yeast. It takes longer to rise since the wild yeast isn’t as vigorous as store bought, on the other hand the long fermentation allows the bread to really develop that unique taste and texture.

We start with the starter. To make a good and strong sourdough starter, we start with two simple ingredients — flour and water. You put 4 ounces of each in a bowl. Here’s the catch — that’s ounces as in weight, not ounces as in volume. Water is heavier than flour so 4 ounces of water is like a half of cup, maybe and 4 ounces of flour is over a cup full. The sour (the sourdough starter) needs lots of food, so you need lots of flour. You mix the two ingredients, cover with plastic wrap and let it sit for two days. After that you’ll need a kitchen scale to help you with the feeding the sour. (Once you have the hang of the look and feel of the right amount of water and flour to sour, you can fore go the scale, but it is handy for all bread making, so spend the $25 if you don’t have one.) To feed the sour use 1 part sour (it will take over your kitchen if you don’t discard some of it), 2 parts water and 3 parts flour. So, for instance, you decide to use 4 ounces of sour. That means you need 8 ounces of water and 12 ounces of flour. That is a lot, by the way. You will find that you get tired of swirling sourdough starter down your drain and quickly shift to 1 ounce of sour to 2 ounces of water to 3 ounces of flour.

You have to feed it every day, or store it in the fridge for use on the weekends. You can easily store the sour in the fridge for three weeks without worry. To make bread on the weekend, take the sour out on Thursday night. Leave it to sit and warm to room temperature until Friday evening. Feed it like usual. Saturday evening you’ll be ready to bake!

What kind of sourdough bread to make is the next question. There are tons of recipes out there, so experiment and see which one you like and find easy.  The best sourdough recipes call for overnight, in the refrigerator, fermentation. This allows the bread ample time to rise and ferment and develop the distinctive flavor and texture.  There are some shortcut sourdough recipes out there that use yeast in addition to the sourdough starter. These are fine, but you will lose almost all of the sour taste. It still makes lovely bread that tastes good, but it is nowhere near real sourdough bread.

Healthy and delicious smoothie recipe

Smoothies makes great snacks – they are delicious and refreshing. The only problem is finding one that is both healthy and yummy. Most of  the health smoothies these days tastes funny and almost fake with all the added healthy ingredients. And the smoothies that do taste great, are most of the times not that good for your figure.

The good news is that I will share with you one that is not only healthy and yummy, but it also good for your figure.  It also contains lots of fat burning foods that may help you to lose some fat. Fat burning foods can also keep you fuller for longer and help you with cravings.

Here’s one of my favorite healthy, figure friendly smoothie recipes that may help you lose some weight. I hope that you enjoy it as much as I do.

Banana smoothie

The frozen bananas make this smoothie extra creamy and satisfying. This smoothie is also a great way to use up extra bananas that may be going off any second. Just peel those bananas and place them in a container in your fridge to use for this smoothie later.

Ingredients:

  • 2 bananas, frozen
  • 120ml fat free banana yogurt
  • 250ml fat free milk
  • 2 teaspoons banana whey powder
  • 5 ml vanilla essence
  • 6 ice cubes, crushed

Instructions:

Blend everything together in a smoothie machine on high. Pour into a smoothie glass and enjoy!

Hopefully you also enjoyed my smoothie recipe as much as I do. It makes a great snack and you can even have it for breakfast if you like.

Just remember that if you want to lose a few centimeters or just get healthier, you also have to include regular exercise. The best combination for weight loss is cardio and weight training. One of my favorite cardio machine is the eliptical machine and my favorite weight training equipment is the adjustable dumbbell system.

Choosing The Right Pestle And Mortar

A mortar and pestle set is invaluable in the kitchen. There is no doubt that it makes life just that little bit easier. But many people do not pick one that is suitable for their needs and they also fail to pick one made from the right materials.

Without doubt one of the best possible choices is a Molcajete mortar and pestle.

Let’s take a look at just why this is such a good choice. The fact is that apart from anything else aesthetics play a big part in kitchen items. If you get a mortar and pestle set that looks ugly you will never use it. It will be hidden away in a cupboard somewhere and never get taken out. But with the molcajete you will be giving it pride of place on the counter and this means it will be used on a daily basis.

But the real reason why it is such a good choice is because of a few other factors. It is heavy and this is important. It means that you will be able to use it properly. Why families love their Mini Oven

Small, also called mini, ovens are especially appealing to families. Why do you ask? Lets look at some scenarios:

Mommy alone at home

Dad takes the kids out for a day of “kids and daddy only quality time”, spending the day fishing, hunting, cycling or whatever the dad and the kids in your family love to do together. Leaves mom alone at home. So, throw yourself into the home spa and indulge yourself with one of your favorite meals, cooked quickly in a small oven. Gratin of asparagus with new, boiled potatoes and sauce hollandaise anybody? You will be fresh and relaxed when they come home, not having have to clean the big oven after you cooked a small, one person meal!

Learning to cook

Using a small oven gives your kids the opportunity to cook their very own meal from scratch and completely on their own. Whilst you have still to supervise the smaller ones, imagine the pleasure of hearing your teenager say to their friends “These brownies I have baked in my own kitchen!” You truly will teach them life skills with this and they will be able to feed themselves in a healthy way when being at university.

Teaching your kids the importance of being responsible with the environment

Kids, like dads, think often that “bigger is better”. By teaching them to use smaller tools for smaller tasks you have taken an important step teaching them the value of energy saving and energy conversation.

Re-heating food the healthy way

I don’t know about you, but I was and am suspicious about how micowaves change the structure of our food. I prefer to re-heat leftovers the natural way, bigger portions in a conventional oven and smaller ones in a smaller oven.

Summary

If you think your family is too big to have a mini oven, think twice. There are a lot of good reasons and situations that justify adding a small oven to your “normal” kitchen. Dualit anyone?

No Nitrate Hot Dogs that Actually Taste Good!

I am so excited! I have FINALLY found a hot dog that seems to be as healthy as possible AND it actually tastes good! and the kids like it too! I have fed it to four kids, ages 5, 6, 7, and 8, all of whom are totally familiar with regular hot dogs. They all ate it the whole hot dog, and none of them even said anything. They just thought they were regular hot dogs.

The hot dog is Applegate Farms The Great Organic Uncured Hot Dog. The ingredients on the package are organic grass-fed beef, water, sea salt, spices, garlic powder, paprica, celery powder, onion, lactic acid starter culture (not from milk).

No nitrates, no preservatives, no gluten, and no FILLERS.

To me, they taste just like hot dogs except they aren’t as soft as regular hot dogs – I think regular hot dogs must achieve that softness with some sort of fillers or major processing. These hot dogs obviously strive to be as healthy as possible so they forgo a bit of softness for that healthiness. I say YES, and good for them.

I found them in a regular grocery store.
